BIOGRAPHICAL SKETCH

Dr. Marshall received a B.S. degree in Biology in 1974 from Duquesne University, a M.S. degree in Food Science in 1976 from Rutgers University, and a Ph.D. degree in Food Science in 1980 from Ohio State University.

Dr. Marshall was appointed Assistant Professor at the Citrus Research and Education Center, Lake Alfred Florida, and was affiliated with the Food Science and Human Nutrition Department, University of Florida, on July 1980. At the Experiment Station, he worked primarily on citrus juice quality, specifically interested in non-thermal inactivation of enzymes in citrus juices. He also taught a course in Citrus Processing Technology at the Gainesville campus during his three year tenure at this location.

Dr. Marshall transferred in 1983 to the University of Florida, Food Science and Human Nutrition Department to teach the service course Man's Food. He had previous experience teaching a similar course "Food and Mankind" at Ohio State University. During this period of time from 1983 to the present, Dr. Marshall achieved the rank of Professor and continues to teach Man's Food, Food Chemistry and has taught Seafood Technology and Lipids and Flavor Chemistry. He is currently a Food Science Advisor in the department.

He was elected to the College of Agriculture's Honor Roll as one of five top teachers in the college. He was awarded a Teaching Improvement Award from the President of the University of Florida, and was selected as a Teaching Fellow by the National Association of Colleges and Teachers in Agriculture. He was also elected to the State Agricultural Experiment Station Leadership Program. He also received a Professorial Excellence Program award from the university.  He is a professional member of the Institute of Food Technologists (IFT), was elected as Chairman of the Florida Section of IFT, and was a member of IFT's Expert Panel on Food Safety and Nutrition. He is also a member of the American Chemical Society and American Association for the Advancement of Science. He has served on a National Bisulfite Advisory Panel, executive committee for the Tropical and Subtropical Fisheries of the Americas, and as a member and topic manager for the USDA Small Business Innovative Research Grants in Food Science and Nutrition.  He also serves as an external assessor to Universiti Putra Malaysia for appointments of faculty in the Food Science and Technology and Biotechnology Departments since 1997.

Dr. Marshall has authored or co-authored more than eighty peer-reviewed scientific publications, book chapters, and books, and given numerous presentations to scientific organizations, and media presentations to consumer groups. He also chaired or co-chaired 14 Masters students, 11 Ph.D. students and has served as a member on 35 student's committees. He has also been invited to serve as an external examiner for Ph.D. candidates in Food Science, McGill University and in Biochemistry, Memorial University.
